Almond Croissant Scones

  • Makes 8 scones

Ingredients

  • 1 pkg XO Baking Biscuit & Scone Mix
  • 8oz almond paste
  • ½ cup almonds, sliced
  • ¼ cup powdered sugar
  • 1 egg + 2 tbsp water

Instructions

  1. Preheat the oven to 400 degrees. Line a cookie sheet with parchment paper.
  2. Make the scone mix according to the directions. At the end of mixing in the eggs, crumble up the almond paste in the mix and mix with a hand mixer.
  3. Place the dough on the cookie sheet and form a round disc approx 8” - 10” diameter. Slice into 8 pieces.
  4. Brush the top with the egg wash, sprinkle the sliced almonds on top.
  5. Bake for 15-20 minutes. Edges will be slightly golden brown, and the scones will be firm.
  6. Remove, cool completely, and dust the tops with powdered sugar. Enjoy!
