Cannoli Coffee Cake

Ingredients for Coffee Cake
- 1 box XO Baking Coffee Cake Mix
- 1 cup mini chocolate chips
- 1 cup pistachios, finely chopped
Ingredients for Ricotta Filling
- 8oz ricotta
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
Instructions
- Mix all of the filling ingredients together until smooth.
- Make the coffee cake mix and the crumble mix included in the box. In the coffee cake portion add the chocolate chips.
- Preheat the oven to 350 degrees. Spray a 9" round springform pan with nonstick baking spray and or line with parchment paper.
- Add 1/2 of the cake mix into the bottom of the pan, spread. Add the ricotta layer, 1/2 of the crumble mix, 1/2 of the pistachios, add the rest of the cake mix on top, spread well.
- Sprinkle the rest of the crumble topping and the pistachios on top.
- Bake for 40-45 minutes or until the center is set and doesn’t jiggle, a toothpick should come out clean.
- Allow to cool completely. Optional, dust the top with powdered sugar. Enjoy!
