Lemon Bars with Shortbread Cookie Crust

Crust

  1. Preheat oven to 350°F.
  2. In a mixing bowl, combine the shortbread cookie mix, butter, and egg yolk.
  3. Mix with a hand mixer for about 3 minutes, until fully combined.
  4. Lightly grease an 8 x 8 inch baking pan and line with parchment paper.
  5. Press the crust mixture evenly into the prepared pan.
  6. Bake for 12 minutes. Remove from oven and set aside.

Filling

  1. In a bowl, whisk together the lemon juice, sugar, and XO Baking Co. Gluten-Free All Purpose Flour until smooth.
  2. Pour the filling over the pre-baked crust.
  3. Return pan to the oven and bake for 24–26 minutes, or until the filling is set.

Cooling and Serving

  1. Allow bars to cool at room temperature for 1 hour.
  2. Transfer to the refrigerator and chill until fully set.
  3. Before serving, dust with powdered sugar, slice, and enjoy.

Recipe Tip

  • For extra lemon flavor, add fresh lemon zest to the filling before baking.
