Ingredients
Crust
- 1 package XO Baking Co. Shortbread Cookie Mix
- 8 tablespoons butter, room temperature
- 1 egg yolk
Lemon Filling
- ¾ cup lemon juice
- ¾ cup sugar
- ¼ cup XO Baking Co. Gluten-Free All Purpose Flour
Instructions
Crust
- Preheat oven to 350°F.
- In a mixing bowl, combine the shortbread cookie mix, butter, and egg yolk.
- Mix with a hand mixer for about 3 minutes, until fully combined.
- Lightly grease an 8 x 8 inch baking pan and line with parchment paper.
- Press the crust mixture evenly into the prepared pan.
- Bake for 12 minutes. Remove from oven and set aside.
Filling
- In a bowl, whisk together the lemon juice, sugar, and XO Baking Co. Gluten-Free All Purpose Flour until smooth.
- Pour the filling over the pre-baked crust.
- Return pan to the oven and bake for 24–26 minutes, or until the filling is set.
Cooling and Serving
- Allow bars to cool at room temperature for 1 hour.
- Transfer to the refrigerator and chill until fully set.
- Before serving, dust with powdered sugar, slice, and enjoy.
