Peach Cake

  • Makes 1 cake

Ingredients

  • 1 1/2 cups XO Baking All Purpose Flour
  • 3/4 cup sugar
  • 2 1/2 tsp baking powder
  • 1/2 tsp kosher salt
  • 2 tbsp brown sugar
  • 1/8 tsp ground nutmeg
  • 2 tsp vanilla extract
  • 1/2 cup unsweetened yogurt
  • 1/2 cup canola oil (sub vegetable oil)
  • 2 1/2 cups peaches, fresh or frozen (peeled and pit removed), sliced

Instructions

  1. Prep the peaches, I like to do a rough chop on the peaches. If using fresh, peel and remove the pit. If frozen, thaw first to drain excess liquid.
  2. Preheat the oven to 350 degrees. Spray a 9” round cake pan at least 2” deep.
  3. In a bowl, add all of the dry ingredients and mix. In a separate bowl, add the wet ingredients and mix well.
  4. Fold in the peaches and pour into the baking dish.
  5. Bake for 25-30 minutes or until a toothpick comes out clean.
  6. Let sit for 5 minutes, flip and enjoy!
