Peach Cake

Ingredients
- 1 1/2 cups XO Baking All Purpose Flour
- 3/4 cup sugar
- 2 1/2 tsp baking powder
- 1/2 tsp kosher salt
- 2 tbsp brown sugar
- 1/8 tsp ground nutmeg
- 2 tsp vanilla extract
- 1/2 cup unsweetened yogurt
- 1/2 cup canola oil (sub vegetable oil)
- 2 1/2 cups peaches, fresh or frozen (peeled and pit removed), sliced
Instructions
- Prep the peaches, I like to do a rough chop on the peaches. If using fresh, peel and remove the pit. If frozen, thaw first to drain excess liquid.
- Preheat the oven to 350 degrees. Spray a 9” round cake pan at least 2” deep.
- In a bowl, add all of the dry ingredients and mix. In a separate bowl, add the wet ingredients and mix well.
- Fold in the peaches and pour into the baking dish.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let sit for 5 minutes, flip and enjoy!
