I came across this gluten free zucchini bread and was excited that it was also dairy free and soy free. It is so delicious. I was very pleasantly surprised how moist it came out. I do recommend that you use a 9 inch loaf pan not the 8 inch, there is way too much batter to fit into the 9 inch loaf pan. If you want something different, XO Baking Co is the product to use.
