Homemade Twinkies

Ingredients for Filling

  • 7oz marshmallow creme
  • 1/3 cup coconut oil (hard-do not melt)
  • 1/2 cup powdered sugar
  • 1 tsp warm water

Instructions

  1. Preheat the oven to 350 degrees. You can either use a Twinkie shaped pan or a 9x13 cake baking pan. Spray with nonstick baking spray.
  2. Make the vanilla cake mix according to the box's directions. Add the cake batter to the baking dish of choice. Bake for 20-30 minutes. A toothpick should come out clean.
  3. Allow to cool completely. If you used the Twinkie pan, you can flip onto a cooling rack to cool completely. If you use a cake pan, flip gently onto a wire rack. You can slice the cake down the center of the cake and then into 3"x4.5" to make mini cake sandwiches.
  4. Add all of the filling ingredients to a bowl and mix on high until smooth. Add the filling in between the sandwiches. Or add to a piping bag and pipe 3 times in a row in the Twinkies.
  5. Enjoy!
