One of my go-to mixes. Typically make them into cupcakes. Favourite versions are citrus and poppyseed. Specifically, some rind of one or two fruits (orange-lemon, lime-lemon, orange-lemon) and either a touch of flavouring or juice. A dash of vanilla to add depth is extra special. Top with a citrus glaze, cream cheese or regular frosting (sometimes flavour frosting with rind, same as cake or other to complement).
